Ingredients

⅓ cupAzar® Chef Xpress Coconut Cashews
2 cupsRomaine, shredded
1 eachPapaya or mango, cubed
½ cupCelery, diced
½ poundCooked shrimp, cut into pieces
1 teaspoonHot sauce (optional)
To tasteSalt and pepper
¼ cupPapaya salad dressing (or Honey Mustard )
¼ cupAzar® Coconut, toasted

Procedure

Makes 2 Servings

  1. In a large mixing bowl combine all ingredients except for the dressing and the coconut.
  2. Add dressing just before serving; toss and sprinkle with coconut.
