Ingredients

4 eachBoneless skinless chicken breasts
¼ cupOlive oil
4 eachMinced garlic cloves
½ cupWhite wine
¾ cupChicken broth
To tasteSalt and pepper
4 tablespoonsButter
½ cupAzar® Raw Pistachios

Procedure

Makes 4 Servings

  1. Flatten chicken breasts between wax paper.
  2. Heat oil and sauté chicken breasts to golden brown color.
  3. Remove chicken and pour off most of the oil.
  4. Sauté garlic being careful not to burn.
  5. Add wine; reduce by half.
  6. Add chicken broth; reduce by half.
  7. Add chicken breasts; simmer for five minutes.  Salt and pepper to taste.
  8. Remove along with pan juices.
  9. Melt butter over medium heat. Add pistachios; stir being careful not to burn.
  10. Top chicken with pistachio butter.
