& PAPAYA
INGREDIENTS
1/3 C. Azar? Chef Xpress Coconut Cashews
2 C. Shredded
Romaine
1 Papaya or Mango,
cubed
1/2 C. Diced Celery
1/2 pound Cooked
Shrimp, cut into pieces
1 tsp. Hot Sauce
(optional)
Salt and pepper to
taste
1/4 C. Papaya Salad
Dressing (Honey Mustard will also work)
1/4 C. Azar? Coconut, toasted
DIRECTIONS
In a large mixing
bowl combine all ingredients except for the dressing and the coconut.
Add dressing just
before serving; toss and sprinkle with coconut.
Serves two.
Alternative serving
suggestion: wrap in a spinach tortilla.
