AZAR QUALITY CANDY RECIPES FROM
BROCCOLI BLUEBERRY SALAD WITH WALNUTS
INGREDIENTS
1/2 to 3/4 pt.
Fresh Blueberries, divided
1/3 C. White Wine
Vinegar
1 Tbsp. Honey
1/2 C.
Walnut Oil
1/2 C. Corn
Oil
Salt and pepper to
taste
1 Broccoli Crown
cut into florets
1/2 C. Azar? Walnuts
DIRECTIONS
VINAIGRETTE:
In food processor,
combine 1/4 c. blueberries, vinegar, and honey. Pulse until blended. Add
oils in slow stream while processor is running. Once emulsified, add salt
and pepper to taste. Refrigerate.
SALAD
Blanch broccoli
florets. Place in ice water immediately. Remove and dry.
Add remaining
blueberries and vinaigrette to florets. Toss and refrigerate until cold.
Prior to serving, add walnuts.
Serves 4 to 6
